Overview: Invertase is an enzyme that catalyzes the hydrolysis of sucrose into fructose and glucose. It is a vital part of the digestion of complex sugar into glucose which the body uses as a fuel source.

It is widely used in confectionery production particularly soft-centered sweets. It is also used for making invert sugar syrup.
